- 150 g unsalted butter (softened)
- 200 g granulated sugar
- 3 large eggs (room temperature)
- 1 tsp vanilla extract
- 200 g cake flour (sifted)
- 1 ½ tsp baking powder
- ½ tsp salt
- 60 ml whole milk
- 200 g white chocolate (chopped)
- 120 ml heavy cream
- 300 g fresh strawberries (hulled and thinly sliced)
Instructions
- Preheat your oven to 175°C (350°F). Grease two 23cm (9-inch) round cake pans and line the bottoms with parchment paper.
- Cream the softened butter and sugar together using an electric mixer until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract.
- Combine the cake flour, baking powder, and salt in a separate bowl, then gradually add to the wet mixture, alternating with the milk.
- Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes until golden.
- Make the ganache by heating the heavy cream, then pouring it over the chopped white chocolate. Stir until smooth.
- Prepare the strawberries by slicing thinly and letting them sit with sugar to release juices.
- Layer the cake by placing the first layer on a plate, adding strawberries, and drizzling with ganache. Top with the second layer and pour remaining ganache over the cake.
- Decorate with extra strawberry slices or edible flowers if desired. Let sit for 30 minutes.
- Serve and enjoy each delightful bite!
