Description

A luxurious layer cake featuring tender, moist layers infused with white chocolate and fresh strawberries, perfect for celebrations.


Ingredients

  • 150 g unsalted butter (softened)
  • 200 g granulated sugar
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 200 g cake flour (sifted)
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 60 ml whole milk
  • 200 g white chocolate (chopped)
  • 120 ml heavy cream
  • 300 g fresh strawberries (hulled and thinly sliced)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease two 23cm (9-inch) round cake pans and line the bottoms with parchment paper.
  2. Cream the softened butter and sugar together using an electric mixer until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract.
  4. Combine the cake flour, baking powder, and salt in a separate bowl, then gradually add to the wet mixture, alternating with the milk.
  5. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes until golden.
  6. Make the ganache by heating the heavy cream, then pouring it over the chopped white chocolate. Stir until smooth.
  7. Prepare the strawberries by slicing thinly and letting them sit with sugar to release juices.
  8. Layer the cake by placing the first layer on a plate, adding strawberries, and drizzling with ganache. Top with the second layer and pour remaining ganache over the cake.
  9. Decorate with extra strawberry slices or edible flowers if desired. Let sit for 30 minutes.
