- 1 lb lean ground turkey
- 2 cups mixed fresh vegetables (bell peppers, zucchini, carrots)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil or cooking spray
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add the ground turkey, garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until browned, about 6-8 minutes.
- Stir in the mixed vegetables and continue cooking for another 5 minutes.
- Transfer the turkey and veggie mixture into your prepared baking dish.
- Sprinkle the shredded cheese on top.
- Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
You can prepare the turkey and veggie mixture a day in advance and refrigerate it before baking.
