Instructions
- Combine the drained crushed pineapple, shredded coconut, rolled oats, honey (or maple syrup), and vanilla extract in a large mixing bowl. Mix until thoroughly blended.
- Fold in the chopped nuts until evenly distributed throughout the mixture.
- Scoop out portions of the mixture using your hands or a cookie scoop, rolling them into 1-inch balls.
- Place the balls on a lined baking sheet with space between them.
- Refrigerate for about 30 minutes to allow them to set.
