Description

Delicious Thai chicken meatballs bathed in a rich coconut curry sauce, delivering comfort and vibrant flavors in every bite.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 2 tbsp lime juice
  • Cooked rice for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the meatballs by combining the ground chicken, breadcrumbs, cilantro, egg, garlic, ginger, salt, and pepper in a mixing bowl.
  3. Shape the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes until cooked through, reaching an internal temperature of 165°F (74°C).
  5. Create the curry sauce by combining coconut milk, red curry paste, soy sauce, and lime juice in a skillet and cooking until smooth.
  6. Simmer the meatballs in the sauce for an additional 5-10 minutes.
  7. Serve the meatballs over rice, garnished with cilantro or lime wedges.
