- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup chopped fresh cilantro
- 1 egg
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp soy sauce
- 2 tbsp lime juice
- Cooked rice for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the meatballs by combining the ground chicken, breadcrumbs, cilantro, egg, garlic, ginger, salt, and pepper in a mixing bowl.
- Shape the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until cooked through, reaching an internal temperature of 165°F (74°C).
- Create the curry sauce by combining coconut milk, red curry paste, soy sauce, and lime juice in a skillet and cooking until smooth.
- Simmer the meatballs in the sauce for an additional 5-10 minutes.
- Serve the meatballs over rice, garnished with cilantro or lime wedges.
Notes
For make-ahead meals, prepare meatballs a day in advance. Store in the fridge and bake on the day of serving.
