Description

Delicious sweet potato halves baked with eggs and bacon, customizable with various toppings for a hearty breakfast.


Ingredients

Scale
  • 2 medium sweet potatoes
  • 4 large eggs
  • 4 strips of bacon
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, hot sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for about 45 minutes, or until tender.
  4. Cook the bacon in a skillet until crispy.
  5. Let the sweet potatoes cool slightly, then cut them in half and scoop out some flesh.
  6. Crack an egg into each sweet potato half, sprinkle with salt and pepper, and add crumbled bacon.
  7. Return to the oven and bake for another 15-20 minutes.
  8. Serve warm, garnished with optional toppings.

Notes

You can roast the sweet potatoes a day ahead. For a quicker method, use an air fryer at 375°F for about 25 minutes.
