- 2 medium sweet potatoes
- 4 large eggs
- 4 strips of bacon
- Salt and pepper to taste
- Optional toppings: shredded cheese, green onions, hot sauce
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for about 45 minutes, or until tender.
- Cook the bacon in a skillet until crispy.
- Let the sweet potatoes cool slightly, then cut them in half and scoop out some flesh.
- Crack an egg into each sweet potato half, sprinkle with salt and pepper, and add crumbled bacon.
- Return to the oven and bake for another 15-20 minutes.
- Serve warm, garnished with optional toppings.
Notes
You can roast the sweet potatoes a day ahead. For a quicker method, use an air fryer at 375°F for about 25 minutes.
