- 1 cup fresh pineapple, diced
- 1/2 cup sweet chili sauce

- 2 cloves garlic, minced

- 1/4 cup green onions, sliced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
Instructions
- Prepare the shrimp: Rinse the shrimp under cold water and pat them dry with a paper towel. Season with a sprinkle of salt and pepper.
- Heat the pan: In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
- Cook the garlic and ginger: Add the minced garlic and ginger to the skillet, sautéing for about 1 minute until fragrant.
- Add the shrimp: Place the shrimp in the skillet; cook for 2-3 minutes or until they turn pink and opaque.
- Incorporate the pineapple: Gently add the diced pineapple to the skillet.
- Add sauces: Pour in the sweet chili sauce and soy sauce, mixing everything well. If you like heat, add the red pepper flakes.
- Simmer: Let the mixture simmer for an additional 2-3 minutes.
- Finish with green onions: Remove from heat and stir in the sliced green onions.
- Taste and adjust: Adjust the seasoning if necessary.
