  • 1/4 cup green onions, sliced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the shrimp: Rinse the shrimp under cold water and pat them dry with a paper towel. Season with a sprinkle of salt and pepper.
  2. Heat the pan: In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
  3. Cook the garlic and ginger: Add the minced garlic and ginger to the skillet, sautéing for about 1 minute until fragrant.
  4. Add the shrimp: Place the shrimp in the skillet; cook for 2-3 minutes or until they turn pink and opaque.
  5. Incorporate the pineapple: Gently add the diced pineapple to the skillet.
  6. Add sauces: Pour in the sweet chili sauce and soy sauce, mixing everything well. If you like heat, add the red pepper flakes.
  7. Simmer: Let the mixture simmer for an additional 2-3 minutes.
  8. Finish with green onions: Remove from heat and stir in the sliced green onions.
  9. Taste and adjust: Adjust the seasoning if necessary.
  10. Serve immediately: Dish out your Sweet Chili Pineapple Shrimp while it’s hot.
