Description
A vibrant salad combining crisp cucumbers with sweet corn and a creamy dressing, perfect for summer gatherings.
Ingredients
Scale
- 2 cups fresh corn kernels (or canned corn)
- 1 medium cucumber (English recommended for its thin skin)
- 1 cup cherry tomatoes (or grape tomatoes)
- 1/2 medium red onion (or green onions for a milder taste)
- 1 cup feta cheese (or goat cheese, or omit)
- 1/4 cup cilantro (omit if not preferred)
- 1/3 cup mayonnaise (or Greek yogurt for lighter option)
- 1/3 cup sour cream (or more Greek yogurt)
- 2 tablespoons lime juice (or lemon juice)
- 1 teaspoon chili powder (adjust to preferred heat level)
- Salt and pepper to taste
Instructions
- Prepare the corn: Start by shucking the fresh corn, removing each kernel from the cob. For added flavor, sauté it in a bit of olive oil over medium heat until slightly charred.
- Chop the vegetables: Dice the cucumber into bite-sized pieces, halve the cherry tomatoes, and finely chop the red onion.
- Make the dressing: In a bowl, mix together the mayonnaise, sour cream, lime juice, and chili powder until smooth and creamy.
- Combine the ingredients: In a large mixing bowl, toss together the charred corn, cucumber, tomatoes, and onion with the dressing.
- Garnish and chill: Add cilantro if using, toss gently, and allow the salad to chill in the fridge for at least 30 minutes.
