Description

Deliciously fluffy muffins filled with creamy cheese and juicy strawberries, perfect for breakfast or any time of day.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, diced
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and place paper liners in a muffin tin.
  2. Mix the dry ingredients by whisking together flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients in another bowl: mix melted butter, milk, eggs, and vanilla until thoroughly combined.
  4. Combine the wet and dry mixtures, stirring until just combined. Fold in diced strawberries gently.
  5. Prepare the cream cheese filling by beating together softened cream cheese and powdered sugar until smooth.
  6. Assemble the muffins by filling each liner halfway with batter, adding a spoonful of cream cheese filling, and topping off with more batter.
  7. Bake in the preheated oven for 20-25 minutes, checking with a toothpick for doneness.
  8. Cool the muffins for a few minutes before transferring them to a wire rack.

Notes

For a twist, try adding lemon zest or swap strawberries for blueberries.
