- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and place paper liners in a muffin tin.
- Mix the dry ingredients by whisking together flour, granulated sugar, baking powder, and salt in a large bowl.
- Combine the wet ingredients in another bowl: mix melted butter, milk, eggs, and vanilla until thoroughly combined.
- Combine the wet and dry mixtures, stirring until just combined. Fold in diced strawberries gently.
- Prepare the cream cheese filling by beating together softened cream cheese and powdered sugar until smooth.
- Assemble the muffins by filling each liner halfway with batter, adding a spoonful of cream cheese filling, and topping off with more batter.
- Bake in the preheated oven for 20-25 minutes, checking with a toothpick for doneness.
- Cool the muffins for a few minutes before transferring them to a wire rack.
Notes
For a twist, try adding lemon zest or swap strawberries for blueberries.
