Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 cup strawberries, pureed
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Incorporate the dry ingredients into the wet mixture until just combined.
  7. Fold in the strawberry puree until swirled through the dough.
  8. Beat the softened cream cheese and powdered sugar until smooth and creamy.
  9. Drop spoonfuls of the cookie dough onto a prepared baking sheet, create an indent, and fill it with the cream cheese mixture.
  10. Bake for 12–15 minutes until edges are golden but centers remain soft.
  11. Cool on a wire rack before enjoying.

Notes

You can refrigerate the dough a day in advance and bake later. Use an air fryer at 320°F (160°C) for about 10 minutes as an alternative.
