Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well-blended.
- In another bowl, combine the milk, vegetable oil, and egg. Mix this velvety mixture into the dry ingredients, stirring until just combined to prevent over-mixing.
- Gently fold in the fresh, juicy blackberries, creating a playful swirl of color and flavor.
- For the streusel topping, mix the cold butter, brown sugar, flour, and cinnamon together with a fork until crumbly.
- Spoon the muffin batter into the prepared muffin tin, filling each liner about two-thirds full. Generously sprinkle the streusel topping over each muffin.
- Bake for 18-20 minutes or until a toothpick poked into the center comes out clean.
- Let the muffins cool slightly in the tin before transferring them to a cooling rack.
