Description

A vibrant and flavorful dish featuring succulent salmon fillets roasted with zesty orange juice, chili seasoning, and colorful mixed vegetables.


Ingredients

  • 2 Oranges (juice and zest)
  • 2 tablespoons Chili seasoning
  • 4 cups Mixed vegetables (bell peppers, broccoli, asparagus)
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss mixed vegetables with olive oil, salt, and pepper in a sheet pan.
  3. Rub salmon fillets with orange juice and zest followed by chili seasoning.
