Description

Tender pulled chicken smothered in a sweet and tangy root beer BBQ sauce, topped with crunchy coleslaw and served on soft sandwich buns.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup root beer
  • 1 cup ketchup
  • 1/4 cup molasses
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Soft sandwich buns
  • Coleslaw (for serving)

Instructions

  1. Combine the sauce ingredients in the slow cooker: root beer, ketchup, molasses, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and coat them generously with the sauce.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  4. Shred the chicken in the slow cooker and mix it with the sauce.
  5. Spoon the pulled chicken onto the soft sandwich buns and top with coleslaw.

Notes

For maximum flavor, let the shredded chicken sit in the sauce for 30 minutes before serving.
