Description
Crispy baked potato skins topped with melted cheese, crispy bacon, sour cream, and green onions.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 6 strips of bacon
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes.
- Pierce the potatoes with a fork.
- Bake the potatoes for about 45-60 minutes until tender.
- Cook the bacon in a skillet over medium heat until crispy, then crumble it.
- Let the baked potatoes cool for a few minutes.
- Cut the potatoes in half lengthwise and scoop out some flesh.
- Brush the skins with olive oil and season with salt and pepper.
- Sprinkle the shredded cheese and crumbled bacon into each potato half.
- Return the potato skins to the oven and bake for another 10-15 minutes until cheese is melted.
- Serve topped with sour cream and chopped green onions.
Notes
Feel free to customize with toppings such as jalapeños or guacamole. Store leftovers in an airtight container for up to 3 days.
