Description

Crispy baked potato skins topped with melted cheese, crispy bacon, sour cream, and green onions.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 6 strips of bacon
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes.
  3. Pierce the potatoes with a fork.
  4. Bake the potatoes for about 45-60 minutes until tender.
  5. Cook the bacon in a skillet over medium heat until crispy, then crumble it.
  6. Let the baked potatoes cool for a few minutes.
  7. Cut the potatoes in half lengthwise and scoop out some flesh.
  8. Brush the skins with olive oil and season with salt and pepper.
  9. Sprinkle the shredded cheese and crumbled bacon into each potato half.
  10. Return the potato skins to the oven and bake for another 10-15 minutes until cheese is melted.
  11. Serve topped with sour cream and chopped green onions.

Notes

Feel free to customize with toppings such as jalapeños or guacamole. Store leftovers in an airtight container for up to 3 days.
