Description

Delicious pork meatballs served atop creamy sweet potato mash, drizzled with a rich bourbon-maple sauce for a comforting meal.


Ingredients

  • 1 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large sweet potatoes
  • 1/2 cup butter
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper in a large bowl. Mix well and form into 2-inch meatballs.
  3. Place the meatballs on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes until golden-brown and cooked through.
  5. Peel and chop the sweet potatoes. Boil in salted water until tender, about 15 minutes.
  6. Drain the sweet potatoes, return to pot, and add butter. Mash until smooth.
  7. Combine bourbon, maple syrup, and Dijon mustard in a small saucepan. Simmer for 5-7 minutes until thickened.
  8. Serve meatballs on sweet potato mash, drizzled with bourbon-maple sauce.

Make-ahead tip: Prep meatballs and mash a day in advance. Refrigerate, then bake when ready to serve.
