- 1 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large sweet potatoes
- 1/2 cup butter
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 1 tablespoon Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper in a large bowl. Mix well and form into 2-inch meatballs.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden-brown and cooked through.
- Peel and chop the sweet potatoes. Boil in salted water until tender, about 15 minutes.
- Drain the sweet potatoes, return to pot, and add butter. Mash until smooth.
- Combine bourbon, maple syrup, and Dijon mustard in a small saucepan. Simmer for 5-7 minutes until thickened.
- Serve meatballs on sweet potato mash, drizzled with bourbon-maple sauce.
