Instructions
- Combine the diced pineapple, coconut milk, lime juice, honey (if using), and lime zest in a blender.
- Blend until smooth and creamy.
- Pour the mixture into popsicle molds, leaving space at the top.
- Insert popsicle sticks into the molds.
- Freeze for at least 240-360 minutes, or until solid.
- Run warm water over the molds for a few seconds and gently remove the popsicles.
