Description

A vibrant salsa that combines sweet pineapple, smoky chipotle, and zesty lime for a refreshing dip or topping.


Ingredients

  • 1 cup fresh pineapple, diced
  • 12 chipotle peppers in adobo sauce, minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Prepare the pineapple: Trim and core fresh pineapple, then dice into roughly 1/4-inch pieces.
  2. Minced chipotle peppers: Remove 1–2 chipotle peppers from the can of adobo and finely mince.
  3. Combine ingredients: In a medium mixing bowl, add the diced pineapple, minced chipotle, finely chopped red onion, and chopped cilantro.
  4. Add lime and salt: Squeeze the juice of one lime over the mixture and sprinkle in salt to taste.
  5. Stir and rest: Stir gently, and let sit at room temperature for at least 15 minutes.
  6. Serve: Spoon into a bowl and serve with tortilla chips or over tacos.

Notes
