- 4 boneless, skinless Chicken Breasts
- 1 cup Pesto Sauce (store-bought or homemade)
- 1 cup Cherry Tomatoes, halved
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 2 tablespoons Olive Oil
- Salt and Pepper (to taste)
- Fresh Basil Leaves (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Drizzle 1 tablespoon of olive oil into a large baking dish and spread it evenly.
- Pat each chicken breast dry, season with salt and pepper, and place in the dish in a single layer.
- Spoon the pesto over the chicken breasts, covering well.
- Scatter halved cherry tomatoes around the chicken, cut side up.
- Drizzle the remaining tablespoon of olive oil over the tomatoes and chicken.
- Evenly sprinkle shredded mozzarella and Parmesan cheese over the chicken.
- Bake for 25–30 minutes or until chicken reaches 165°F (75°C). Broil for 1–2 minutes to achieve a golden top.
- Let the chicken rest for 5 minutes, then garnish with fresh basil before serving.
Notes
Assemble ahead of time and refrigerate for up to 24 hours before baking. This dish reheats beautifully.
