A delightful twist on the classic grilled cheese, featuring sweet pears and tart apples balanced by caramelized onions and sharp cheddar cheese.

- 4 slices sourdough bread
- 2 tablespoons unsalted butter
- 1 medium pear, thinly sliced
- 1 medium apple, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup shredded sharp cheddar cheese
- 1 tablespoon balsamic vinegar
- Salt and black pepper (to taste)
Instructions
- Caramelize the onions: In a medium skillet over medium heat, melt 1 tablespoon of unsalted butter. Add the thinly sliced onions along with a pinch of salt. Stir occasionally and allow them to cook for about 10 minutes, until they are beautifully golden brown. Stir in the balsamic vinegar and cook for an additional 2-3 minutes. Remove from skillet and set aside.
- Prepare the sandwich: In the same skillet, melt the remaining tablespoon of butter over medium heat. Layer two slices of sourdough bread with half of the shredded cheddar cheese on each, add caramelized onions, apple slices, pear slices, and cover with the remaining cheddar. Top with the second slices of bread.
- Grill the sandwiches: Place one sandwich in the heated skillet. Cook for about 4-5 minutes or until golden brown, then flip and grill the other side for another 4-5 minutes, ensuring cheese melts completely. Repeat for second sandwich.
- Serve and enjoy: Remove sandwiches from skillet, cool for a minute, slice in half, and serve warm.
Notes
Caramelize onions in advance for quicker assembly. Can substitute fruits and cheeses as desired.
