- 1 bunch of asparagus, trimmed
- 4 medium carrots, peeled and chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced (optional)
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and trim the asparagus, keeping the tips intact. Peel and chop the carrots into uniform pieces.
- In a large bowl, combine the asparagus and carrots.
- Drizzle with olive oil, then season with salt, pepper, and garlic if desired. Toss everything together until well coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 15-20 minutes, until tender and caramelized.
- Remove from the oven and drizzle with lemon juice before serving.
Notes
You can prep the vegetables a day in advance and store them in an airtight container. For variations, try adding herbs or a sprinkle of Parmesan before serving.
