Description

A vibrant medley of oven-roasted asparagus and carrots that combines health and flavor, perfect as a side dish for any occasion.


Ingredients

  • 1 bunch of asparagus, trimmed
  • 4 medium carrots, peeled and chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced (optional)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the asparagus, keeping the tips intact. Peel and chop the carrots into uniform pieces.
  3. In a large bowl, combine the asparagus and carrots.
  4. Drizzle with olive oil, then season with salt, pepper, and garlic if desired. Toss everything together until well coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 15-20 minutes, until tender and caramelized.
  7. Remove from the oven and drizzle with lemon juice before serving.

Notes

You can prep the vegetables a day in advance and store them in an airtight container. For variations, try adding herbs or a sprinkle of Parmesan before serving.
