Ingredients

- 1 cup of orzo pasta
- 2 cups of fresh spinach
- 1 cup of vegetable or chicken broth
- 1 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in the broth and bring to a gentle boil.
- Add the orzo and reduce to a simmer; cook until al dente, about 8-10 minutes.
- Stir in fresh spinach just before the orzo is done, cooking until wilted.
- Remove from heat and mix in grated Parmesan cheese.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
Make-ahead by preparing the base in advance and adding cheese before serving. For an upgrade, bake with extra Parmesan on top.
