Description

A refreshing and light dessert made with layers of creamy mascarpone, ladyfingers, and vibrant fresh berries, perfect for warm weather gatherings.


Ingredients

  • 1 package of ladyfinger cookies or graham crackers
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup melted butter

Instructions

  1. Whip 1 cup of heavy cream until soft peaks form.
  2. Combine 1 cup of mascarpone cheese, 1/2 cup of powdered sugar, and 1 tsp of vanilla extract in another bowl.
  3. Fold the whipped cream into the mascarpone mixture using a silicone spatula.
  4. Prepare a 9×13 inch baking dish by coating the bottom with 1/4 cup melted butter.
  5. Lay down the ladyfinger cookies or graham crackers in a single layer over the butter.
  6. Spread a generous layer of the mascarpone mixture over the cookies.
  7. Sprinkle a layer of mixed fresh berries on top.
  8. Repeat the layers until all ingredients are used, finishing with a final layer of berries on top.
  9. Refrigerate for at least 2 hours before serving.

Notes

Make-ahead tips: Prepare this lasagna a day in advance for the best flavor. Customize with different fruits and be careful not to over-soak the ladyfingers.
