- 1 package of ladyfinger cookies or graham crackers
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup melted butter
Instructions
- Whip 1 cup of heavy cream until soft peaks form.
- Combine 1 cup of mascarpone cheese, 1/2 cup of powdered sugar, and 1 tsp of vanilla extract in another bowl.
- Fold the whipped cream into the mascarpone mixture using a silicone spatula.
- Prepare a 9×13 inch baking dish by coating the bottom with 1/4 cup melted butter.
- Lay down the ladyfinger cookies or graham crackers in a single layer over the butter.
- Spread a generous layer of the mascarpone mixture over the cookies.
- Sprinkle a layer of mixed fresh berries on top.
- Repeat the layers until all ingredients are used, finishing with a final layer of berries on top.
- Refrigerate for at least 2 hours before serving.
Notes
Make-ahead tips: Prepare this lasagna a day in advance for the best flavor. Customize with different fruits and be careful not to over-soak the ladyfingers.
