Description

Delightful pastries that are light and airy with a crispy exterior, covered in powdered sugar – a true taste of New Orleans.

Ingredients

Scale
  • 1 packet active dry yeast
  • 1 cup all-purpose flour, plus extra for dusting
  • 1/4 cup granulated sugar
  • 1/2 cup warm milk
  • 1/2 cup warm water
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • Powdered sugar, for serving

Instructions

  1. Activate the yeast: In a bowl, mix warm water, a pinch of sugar, and yeast. Allow it to sit for 5 minutes until frothy.
  2. Create the dough: In a mixing bowl, whisk together flour, remaining sugar, and salt. Make a well in the center and pour in the yeast mixture, milk, and melted butter. Stir until a shaggy dough forms.
  3. Knead: Transfer the dough to a floured surface. Knead for 5-7 minutes until smooth and elastic.
  4. Let it rise: Place the dough in a greased bowl, cover with a cloth, and let it rise until doubled in size (1-2 hours).
  5. Roll and cut: Once risen, roll the dough to 1/4 inch thick. Cut into squares.
  6. Heat the oil: In a deep fryer or heavy pot, heat oil to 350°F (175°C). Fry squares until puffed and golden brown (2-3 minutes each side).
  7. Drain and dust: Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar while still hot.
  8. Serve: Enjoy them fresh and warm; be prepared for smiles!

Notes

Make the dough the night before and refrigerate. Ensure proper oil temperature for frying.
