Description

Ingredients

  • 1 cup shredded zucchini
  • 1 cup apples, peeled and grated
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your loaf pan to prevent any sticking.
  2. Combine the shredded carrots, zucchini, and grated apples in a large bowl.
  3. Whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Cream together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
  5. Incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in the shredded fruits and veggies gently.
  7. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 55-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a healthier twist, swap granulated sugar with coconut sugar or vegetable oil with applesauce. Customize with nuts or chocolate chips.
