Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your loaf pan to prevent any sticking.
- Combine the shredded carrots, zucchini, and grated apples in a large bowl.
- Whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Cream together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the shredded fruits and veggies gently.
- Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a healthier twist, swap granulated sugar with coconut sugar or vegetable oil with applesauce. Customize with nuts or chocolate chips.
