Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually add the dry mix into the creamed mixture, blending until just combined.
  6. Fold in the mint chocolate chips gently.
  7. Drop rounded mounds of dough onto ungreased baking sheets, spacing them about two inches apart.
  8. Bake for 10-12 minutes, or until edges are lightly golden and centers remain soft.
  9. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For a chewier texture, slightly underbake the cookies. You can also use dark chocolate chips for a richer flavor.
