- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract

- 1 teaspoon baking soda

- 1 cup mint chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry mix into the creamed mixture, blending until just combined.
- Fold in the mint chocolate chips gently.
- Drop rounded mounds of dough onto ungreased baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden and centers remain soft.
- Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For a chewier texture, slightly underbake the cookies. You can also use dark chocolate chips for a richer flavor.
