A tropical-inspired sandwich featuring marinated chicken, grilled pineapple, and a spicy aioli, perfect for summer barbecues.

- 2 boneless skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 clove garlic, minced
- 1 teaspoon fresh ginger, grated
- 4 brioche burger buns
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 4 fresh pineapple slices
- 4 lettuce leaves
- 1 medium tomato, sliced
- 1 small red onion, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger until well combined.
- Marinate the chicken in a resealable bag with the marinade for at least 30 minutes.
- Preheat your grill to medium-high heat and brush with vegetable oil.
- Grill the chicken for about 6–7 minutes per side until cooked through, basting with reserved marinade.
- Grill the pineapple slices for 1–2 minutes on each side.
- Mix mayonnaise and sriracha to create the spicy aioli.
- Toast the brioche buns on the grill for about 1 minute until golden.
- Assemble the sandwich with aioli, lettuce, tomato, chicken, pineapple, and onion.
Notes
For extra flavor, marinate the chicken overnight. Optionally, substitute chicken thighs for a richer taste.
