Description

A tropical-inspired sandwich featuring marinated chicken, grilled pineapple, and a spicy aioli, perfect for summer barbecues.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 brioche burger buns
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 4 fresh pineapple slices
  • 4 lettuce leaves
  • 1 medium tomato, sliced
  • 1 small red onion, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger until well combined.
  2. Marinate the chicken in a resealable bag with the marinade for at least 30 minutes.
  3. Preheat your grill to medium-high heat and brush with vegetable oil.
  4. Grill the chicken for about 6–7 minutes per side until cooked through, basting with reserved marinade.
  5. Grill the pineapple slices for 1–2 minutes on each side.
  6. Mix mayonnaise and sriracha to create the spicy aioli.
  7. Toast the brioche buns on the grill for about 1 minute until golden.
  8. Assemble the sandwich with aioli, lettuce, tomato, chicken, pineapple, and onion.

Notes

For extra flavor, marinate the chicken overnight. Optionally, substitute chicken thighs for a richer taste.
