Description

A vibrant salad combining sweet mango, creamy avocado, and succulent shrimp, perfect for warm evenings.

Ingredients

Scale
  • 1 ripe mango, diced
  • 1 pound shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1/4 cup red onion, diced
  • 1 jalapeño, minced (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Combine the fresh ingredients: Add the diced mango, avocado, red onion, and minced jalapeño (if using) into a large mixing bowl. Gently toss them to combine.
  2. Cook the shrimp: Heat the olive oil in a non-stick skillet over medium heat. Add the shrimp and cook for about 3-4 minutes per side until they turn pink and opaque.
  3. Prepare the dressing: In a small bowl, whisk together the lime juice, salt, and pepper until well combined.
  4. Combine the salad: Once cooked, add the shrimp to the mixing bowl with the mango mixture. Drizzle the lime dressing over everything and toss gently.
  5. Garnish and serve: Finish with a sprinkle of fresh cilantro, and serve the salad chilled.

Notes

Make the salad fresh for best results. You can prepare ingredients ahead of time but mix just before serving to prevent browning.
