Description

Crispy comfort food featuring tender chicken breasts rolled with ham and cheese, served with a creamy sauce.


Ingredients

  • 4 boneless chicken breasts (thinly pounded)
  • 4 slices of chicken ham
  • 4 slices of Swiss cheese (or Provolone/Gruyère)
  • 1 cup all-purpose flour (gluten-free if needed)
  • 2 eggs (or plant-based milk for a vegan version)
  • 1 cup panko breadcrumbs (gluten-free available)
  • 1/4 cup olive oil
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pound the chicken breasts to about ¼-inch thickness and season with salt and pepper.
  3. Assemble each chicken breast with a slice of chicken ham and cheese, then roll tightly.
  4. Set up your dredging station with flour, beaten eggs, and panko breadcrumbs.
  5. Dredge each roll in flour, dip in eggs, and coat in panko breadcrumbs.
  6. Heat olive oil in a large frying pan and cook each roll until golden brown, about 5-7 minutes per side.
  7. Transfer the rolls to a baking sheet and bake for 15 minutes.
  8. Whisk together the sauce ingredients until smooth.
  9. Slice each roll into pinwheels and drizzle with the creamy sauce before serving.
