- 4 slices of chicken ham
- 4 slices of Swiss cheese (or Provolone/Gruyère)
- 1 cup all-purpose flour (gluten-free if needed)
- 2 eggs (or plant-based milk for a vegan version)
- 1 cup panko breadcrumbs (gluten-free available)
- 1/4 cup olive oil
- 1/2 cup mayonnaise (or Greek yogurt)
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Pound the chicken breasts to about ¼-inch thickness and season with salt and pepper.
- Assemble each chicken breast with a slice of chicken ham and cheese, then roll tightly.
- Set up your dredging station with flour, beaten eggs, and panko breadcrumbs.
- Dredge each roll in flour, dip in eggs, and coat in panko breadcrumbs.
- Heat olive oil in a large frying pan and cook each roll until golden brown, about 5-7 minutes per side.
- Transfer the rolls to a baking sheet and bake for 15 minutes.
- Whisk together the sauce ingredients until smooth.
- Slice each roll into pinwheels and drizzle with the creamy sauce before serving.
