This comforting Loaded Beef & Potato Bake combines ground beef and tender potatoes, topped with melted cheese for a delicious family meal.

- 1 lb ground beef
- 4 medium potatoes, thinly sliced
- 1 cup shredded cheese (cheddar or your preference)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: herbs like thyme or rosemary
Instructions
- Preheat your oven to 350°F (175°C). Place the rack in the center.
- Heat 1 tablespoon of olive oil in a heavy skillet over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the ground beef to the skillet. Cook until well-browned, about 7–9 minutes, seasoning with salt, pepper, and optional herbs during the last minute.
- In a lightly greased baking dish, arrange half of the sliced potatoes in an even layer, slightly overlapping and seasoning lightly with salt and pepper.
- Spoon the beef mixture evenly over the first potato layer.
- Layer the remaining potato slices on top. Press down slightly.
- Pour 1 cup of beef broth evenly over the dish.
- Sprinkle 1 cup of shredded cheese over the top. Cover the dish tightly with foil.
- Bake covered for 45 minutes.
- Remove the foil and bake an additional 15 minutes, or until the top is browned and cheese is bubbling.
- Let the bake rest for 5–10 minutes before serving.
Notes
You can add vegetables or use different cheeses for a unique twist. Adjust the cooking time if using leaner meat or different potatoes.
