- 1/2 cup lemon curd
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 package ladyfinger cookies
- 1 cup lemon juice
- Zest of 1 lemon
- Fresh mint leaves for garnish (optional)
Instructions
- Whisk together mascarpone cheese, lemon curd, and lemon zest in a large bowl until smooth.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Fold the whipped cream into the mascarpone mixture gently.
- Soak the ladyfingers in the lemon juice quickly, just enough to absorb some flavor.
- Layer half of the soaked ladyfingers in a serving dish, then spread half of the mascarpone mixture over them.
- Repeat the layering process with the remaining ladyfingers and mascarpone mixture.
- Chill the dessert for at least 240 minutes, preferably overnight.
- Serve chilled, garnished with fresh mint leaves if desired.
Notes
Taste the lemon juice before using, as lemons can vary in tartness. Avoid soaking the ladyfingers too long.
