Description

A light and refreshing twist on the classic Italian dessert, combining creamy mascarpone, tangy lemon curd, and sponge ladyfingers for a delightful experience.


Ingredients

  • 1 cup mascarpone cheese
  • 1/2 cup lemon curd
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 package ladyfinger cookies
  • 1 cup lemon juice
  • Zest of 1 lemon
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Whisk together mascarpone cheese, lemon curd, and lemon zest in a large bowl until smooth.
  2. Whip the heavy cream in a separate bowl until soft peaks form.
  3. Fold the whipped cream into the mascarpone mixture gently.
  4. Soak the ladyfingers in the lemon juice quickly, just enough to absorb some flavor.
  5. Layer half of the soaked ladyfingers in a serving dish, then spread half of the mascarpone mixture over them.
  6. Repeat the layering process with the remaining ladyfingers and mascarpone mixture.
  7. Chill the dessert for at least 240 minutes, preferably overnight.
  8. Serve chilled, garnished with fresh mint leaves if desired.

Notes

Taste the lemon juice before using, as lemons can vary in tartness. Avoid soaking the ladyfingers too long.
