Description

A refreshing and tangy Lemon Lime Jello Salad, perfect for summer gatherings and family celebrations.


Ingredients

  • 1 package lemon gelatin
  • 1 package lime gelatin
  • 1 cup cottage cheese
  • 1 cup crushed pineapple (drained)
  • 1 cup whipped topping
  • 1/2 cup boiling water
  • 1/2 cup cold water
  • 1/4 cup sugar (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice

Instructions

  1. Dissolve the lemon and lime gelatin in 1/2 cup boiling water. Stir until fully transparent and all granules have dissolved.
  2. Add the cold water along with the lemon and lime juices. Mix well to blend all the delicious citrus flavors.
  3. Refrigerate this mixture until it starts to thicken, about 30 minutes.
  4. Combine the cottage cheese, drained crushed pineapple, and whipped topping in a separate bowl. Stir gently until well blended and creamy.
  5. Fold the cottage cheese mixture into the thickened gelatin gently to maintain an airy texture.
  6. Pour the colorful mixture into a serving dish or individual cups and refrigerate until fully set, about 2-3 hours.
  7. Slice into squares or spoon into bowls before serving.
