- 1 package lemon gelatin
- 1 package lime gelatin
- 1 cup cottage cheese
- 1 cup crushed pineapple (drained)
- 1 cup whipped topping
- 1/2 cup boiling water
- 1/2 cup cold water
- 1/4 cup sugar (optional)
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
Instructions
- Dissolve the lemon and lime gelatin in 1/2 cup boiling water. Stir until fully transparent and all granules have dissolved.
- Add the cold water along with the lemon and lime juices. Mix well to blend all the delicious citrus flavors.
- Refrigerate this mixture until it starts to thicken, about 30 minutes.
- Combine the cottage cheese, drained crushed pineapple, and whipped topping in a separate bowl. Stir gently until well blended and creamy.
- Fold the cottage cheese mixture into the thickened gelatin gently to maintain an airy texture.
- Pour the colorful mixture into a serving dish or individual cups and refrigerate until fully set, about 2-3 hours.
- Slice into squares or spoon into bowls before serving.
Notes
Makes a great make-ahead dish; prepare a day in advance and keep covered in the fridge.
