  • 12 chipotle peppers in adobo sauce (minced)
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • 2 brioche buns (split)
  • 2 sausage patties
  • 4 large eggs
  • 2 tbsp milk
  • 2 slices cheddar cheese
  • 1 tbsp butter
  • Salt and freshly ground black pepper

Instructions

  1. Whisk the aioli: In a small bowl, combine mayonnaise, minced chipotle peppers, lime juice, and garlic powder. Mix until creamy and thoroughly blended. Set aside; let the flavors meld.
  2. Cook the sausage: Heat a non-stick skillet over medium heat. Cook the sausage patties for about 4 minutes on each side until golden brown and cooked through. Remove and set aside to rest.
  3. Scramble the eggs: In the same skillet, lower the heat and add 1 tbsp of butter. In another bowl, whisk together the eggs and milk, seasoning with salt and pepper. Pour this mixture into the skillet, gently scrambling the eggs until they reach soft curds, about 2-3 minutes.
  4. Assemble the sandwich: Toast the brioche buns cut-side down in the same skillet until golden brown. Spread a generous amount of chipotle aioli on each bun, followed by one sausage patty, a scoop of scrambled eggs, and a slice of cheddar cheese. Top with the other half of the bun.
  5. Savor the moment: Press down gently, allowing the melted cheese to mingle with the sausage and eggs before indulging.
