  • 1 pound lean ground beef (85–90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes lengthwise, creating long, thick halves. Score the flesh and brush with olive oil, seasoning with salt and pepper.
  3. Roast the sweet potatoes cut-side down on the baking sheet for 30-40 minutes until fork-tender.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent.
  5. Add the minced garlic and cook for 30 seconds until fragrant.
  6. Stir in the ground beef, breaking it apart as it cooks for about 6-8 minutes, draining any excess grease.
  7. Season the beef with smoked paprika, ground cumin, chili flakes, salt, and pepper.
  8. Drizzle in 2 tablespoons of hot honey, simmering for 2-3 minutes until thickened.
