- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika

- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (divided)
- 2 tablespoons fresh parsley or cilantro, chopped
- 1/2 cup crumbled feta or goat cheese (optional)
- 2 green onions, sliced
- 1 tablespoon lime juice

Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes lengthwise, creating long, thick halves. Score the flesh and brush with olive oil, seasoning with salt and pepper.
- Roast the sweet potatoes cut-side down on the baking sheet for 30-40 minutes until fork-tender.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the diced onion for 3-4 minutes until translucent.
