- 1 lb Ground Turkey
- 1 Bell Pepper, chopped
- 1 Onion, chopped
- 1 Zucchini, chopped
- 1/2 cup Feta Cheese, crumbled
- 2 tbsp Olive Oil
- 2 Garlic Cloves, minced
- 1/4 cup Fresh Parsley, chopped
- 1 tsp Oregano
- 1/2 tsp Cumin
- Salt and Pepper to taste
Instructions
- Heat the skillet over medium heat and add olive oil.
- Sauté the chopped onions and garlic for 2-3 minutes until fragrant.
- Cook the ground turkey, breaking it apart until browned and no longer pink.
- Add the chopped bell peppers and zucchini; sauté for 5-7 minutes until softened.
- Mix in the feta cheese and herbs until combined.
- Serve warm with a garnish of fresh herbs and a squeeze of lemon juice.
