- 2 cups mixed colorful vegetables (bell peppers, zucchini, carrots)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cooked rice or quinoa
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Add the ground turkey and cook until golden brown, about 5-7 minutes.
- Stir in the mixed vegetables and cook until slightly softened, about 3-5 minutes.
- Incorporate the cooked rice or quinoa, diced tomatoes, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased casserole dish and spread it evenly.
- Sprinkle shredded cheese generously over the top.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
This casserole can be prepared in advance and stored in the fridge until ready to bake. It’s also adaptable for air fryer cooking for a quicker option.
