Description

A comforting ground turkey casserole filled with vibrant vegetables and a gooey cheese topping, perfect for family meals and meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 cups mixed colorful vegetables (bell peppers, zucchini, carrots)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked rice or quinoa
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat a drizzle of olive oil in a large skillet over medium heat.
  3. Add the ground turkey and cook until golden brown, about 5-7 minutes.
  4. Stir in the mixed vegetables and cook until slightly softened, about 3-5 minutes.
  5. Incorporate the cooked rice or quinoa, diced tomatoes, garlic powder, onion powder, salt, and pepper.
  6. Transfer the mixture to a greased casserole dish and spread it evenly.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Let cool slightly before serving.

Notes

This casserole can be prepared in advance and stored in the fridge until ready to bake. It’s also adaptable for air fryer cooking for a quicker option.
