Description

A vibrant salad featuring grilled peaches, peppery arugula, creamy goat cheese, and crunchy candied pecans, drizzled with balsamic glaze for a perfect balance of sweet and savory.


Ingredients

  • 2 ripe peaches,halved and pitted
  • 4 cups baby arugula
  • 1 cup goat cheese, crumbled
  • 1/2 cup candied pecans
  • 1/4 cup balsamic glaze
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the cut sides of the peaches with olive oil.
  3. Place the peaches cut-side down on the grill and cook for 3-4 minutes until grill marks appear.
  4. Flip the peaches and grill for an additional 2-3 minutes.
  5. In a large mixing bowl, combine baby arugula with olive oil, salt, and pepper. Toss gently.
  6. Assemble the salad by creating a bed of arugula on a serving platter, topping with grilled peaches, goat cheese, and candied pecans.
  7. Drizzle the salad with balsamic glaze.

Notes
