- 2 ripe peaches,halved and pitted
- 4 cups baby arugula
- 1 cup goat cheese, crumbled
- 1/2 cup candied pecans
- 1/4 cup balsamic glaze
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Brush the cut sides of the peaches with olive oil.
- Place the peaches cut-side down on the grill and cook for 3-4 minutes until grill marks appear.
- Flip the peaches and grill for an additional 2-3 minutes.
- In a large mixing bowl, combine baby arugula with olive oil, salt, and pepper. Toss gently.
- Assemble the salad by creating a bed of arugula on a serving platter, topping with grilled peaches, goat cheese, and candied pecans.
- Drizzle the salad with balsamic glaze.
