Description

Delight in vibrant bell peppers stuffed with savory ground chicken, aromatic herbs, and creamy feta for a Mediterranean-inspired meal.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup feta cheese, crumbled
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup tomato sauce (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds and membranes.
  3. Sauté the onion and garlic in olive oil until soft, about 3-4 minutes.
  4. Cook the ground chicken with oregano, basil, salt, and pepper until fully cooked.
  5. Combine the cooked rice and feta with the chicken mixture.
  6. Stuff each bell pepper with the mixture, placing them upright in a baking dish.
  7. Add tomato sauce on top if desired.
  8. Bake covered for 30-35 minutes until peppers are tender.
  9. Serve warm, optionally with extra feta or olive oil on top.

Notes

Make-ahead by preparing the filling in advance. Customize by adding diced tomatoes or olives.
