- 4 large bell peppers (any color)
- 1 pound ground chicken
- 1 cup cooked rice
- 1 cup feta cheese, crumbled
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup tomato sauce (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by cutting the tops off and removing the seeds and membranes.
- Sauté the onion and garlic in olive oil until soft, about 3-4 minutes.
- Cook the ground chicken with oregano, basil, salt, and pepper until fully cooked.
- Combine the cooked rice and feta with the chicken mixture.
- Stuff each bell pepper with the mixture, placing them upright in a baking dish.
- Add tomato sauce on top if desired.
- Bake covered for 30-35 minutes until peppers are tender.
- Serve warm, optionally with extra feta or olive oil on top.
