Transform classic taco night into a hearty, layered casserole that’s satisfying and bursting with flavor.
Ingredients

- 1 pound (450g) ground beef
- 1 packet (approx. 1 oz / 28g) taco seasoning
- 1/2 cup (120ml) water
- 1 (10 ounce / 280g) can diced tomatoes and green chilies, undrained
- 1 (15 ounce / 425g) can black beans, rinsed and drained
- 1 (15 ounce / 425g) can corn, drained
- 8–10 flour tortillas, cut into bite-sized pieces
- 2 cups (220g) shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Brown the beef in a large skillet over medium heat until beautifully browned.
- Add the taco seasoning and water, simmering for about 5 minutes.
- Combine in the skillet the diced tomatoes, black beans, and corn.
- Layer a thin layer of the beef mixture in a baking dish, followed by tortillas and cheese; repeat until ingredients are used up, finishing with cheese.
- Bake in the oven for 20-25 minutes until cheese is melted and bubbly.
- Rest for a few minutes before serving, topping with desired garnishes.
Notes
This casserole can be made a day ahead and stored in the refrigerator. For an air fryer option, cook at 350°F for about 15-20 minutes.
