Instructions
- Preheat your oven to 350°F (175°C) and grease your baking dish thoroughly.
- Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
- Whisk together the oil, eggs, grated carrots, and vanilla extract in another bowl.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared baking dish, smoothing it out evenly.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Beat together the softened cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, continuing to beat until creamy.
- Frost the cooled bars generously with the cream cheese frosting.
