Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish thoroughly.
  2. Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
  3. Whisk together the oil, eggs, grated carrots, and vanilla extract in another bowl.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared baking dish, smoothing it out evenly.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Beat together the softened cream cheese and butter until smooth.
  8. Gradually add powdered sugar and vanilla extract, continuing to beat until creamy.
  9. Frost the cooled bars generously with the cream cheese frosting.
