- 4 Chicken Breasts
- 2 tbsp Olive Oil
- 1 tsp Salt
- 0.5 tsp Pepper
- 1 tsp Paprika
- 2 cups Spinach
- 1 cup Mushrooms
- 4 oz Cream Cheese
- 0.33 cup Parmesan Cheese
Instructions
- Prepare and season the chicken breasts by preheating the oven to 375°F (190°C). Create a pocket in each chicken breast and season with salt, pepper, and paprika.
- Cook the spinach and mushrooms in a sauté pan with olive oil over medium heat until the mushrooms are browned and spinach is wilted.
- Mix the filling in a bowl with cream cheese and Parmesan until well combined.
- Stuff each chicken breast pocket with the creamy mixture and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden.
Notes
For extra flavor, add minced garlic while cooking the spinach and mushrooms. Let the stuffed chicken rest for a few minutes after baking.
