Description

A comforting and impressive dish of tender chicken breasts stuffed with a creamy mixture of spinach and mushrooms.


Ingredients

  • 4 Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 tsp Paprika
  • 2 cups Spinach
  • 1 cup Mushrooms
  • 4 oz Cream Cheese
  • 0.33 cup Parmesan Cheese

Instructions

  1. Prepare and season the chicken breasts by preheating the oven to 375°F (190°C). Create a pocket in each chicken breast and season with salt, pepper, and paprika.
  2. Cook the spinach and mushrooms in a sauté pan with olive oil over medium heat until the mushrooms are browned and spinach is wilted.
  3. Mix the filling in a bowl with cream cheese and Parmesan until well combined.
  4. Stuff each chicken breast pocket with the creamy mixture and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden.

Notes

For extra flavor, add minced garlic while cooking the spinach and mushrooms. Let the stuffed chicken rest for a few minutes after baking.
