Description

Delicious sweet potato boats filled with taco-seasoned ground turkey and creamy cottage cheese, perfect for cozy dinners.


Ingredients

  • 2 medium Sweet Potatoes
  • 1 lb Ground Turkey
  • 1 cup Cottage Cheese
  • 2 tbsp Taco Seasoning
  • 1 cup Cheese (cheddar, Monterey Jack, or pepper jack)
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • Toppings: diced Avocado, Salsa, Cilantro, Diced Tomatoes, Lime Juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork. Rub them with olive oil, salt, and pepper.
  3. Roast the sweet potatoes on a baking sheet for 45-60 minutes until tender.
  4. Cook the ground turkey in a skillet over medium heat until browned. Stir in the taco seasoning.
  5. Create boats by removing the sweet potatoes from the oven and cutting them in half lengthwise. Scoop out some flesh.
  6. Mix the sweet potato flesh with cottage cheese in a bowl.
  7. Assemble by spooning the turkey mixture into the hollowed sweet potatoes.
  8. Top with cheese and any additional toppings.
  9. Bake for an additional 5-10 minutes until the cheese is melted.
  10. Serve warm and enjoy!
