- 2 medium Sweet Potatoes
- 1 lb Ground Turkey
- 1 cup Cottage Cheese
- 2 tbsp Taco Seasoning
- 1 cup Cheese (cheddar, Monterey Jack, or pepper jack)
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- Toppings: diced Avocado, Salsa, Cilantro, Diced Tomatoes, Lime Juice
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pierce them with a fork. Rub them with olive oil, salt, and pepper.
- Roast the sweet potatoes on a baking sheet for 45-60 minutes until tender.
- Cook the ground turkey in a skillet over medium heat until browned. Stir in the taco seasoning.
- Create boats by removing the sweet potatoes from the oven and cutting them in half lengthwise. Scoop out some flesh.
- Mix the sweet potato flesh with cottage cheese in a bowl.
- Assemble by spooning the turkey mixture into the hollowed sweet potatoes.
- Top with cheese and any additional toppings.
- Bake for an additional 5-10 minutes until the cheese is melted.
- Serve warm and enjoy!
