- 1 lb steak (sirloin or flank)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice, freshly squeezed
- 1 cup rice (white or brown)
- 1 can black beans
- 1 cup corn (fresh, frozen, or canned)
- 1 avocado, sliced
- 1/2 cup creamy cilantro lime sauce
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Marinate the steak: Combine lime juice, cilantro, olive oil, salt, and pepper in a bowl. Add steak, coat well, and let it marinate for at least 15 minutes.
- Cook the rice: Prepare rice according to package instructions. Fluff with a fork and mix in lime juice and chopped cilantro.
- Cook the steak: Heat a skillet over medium-high heat. Cook marinated steak for 4–5 minutes on each side for desired doneness. Let rest.
- Warm the black beans and corn in a pot for a few minutes, seasoning with a pinch of salt.
- Slice the steak against the grain into thin strips.
- Assemble the bowls: Layer rice, black beans, corn, sliced avocado, and sliced steak in a serving bowl. Drizzle with creamy cilantro lime sauce.
Notes
Marinate the steak a day in advance for deeper flavor. Customize with favorite toppings.
