Description

A comforting and hearty breakfast featuring spicy chorizo and creamy scrambled eggs.


Ingredients

  • 1 tablespoon Olive Oil or Butter
  • 1 cup Chorizo Sausage, chopped
  • 4 large Eggs
  • Salt, to taste
  • Pepper, to taste
  • Optional Toppings: Sliced avocado, fresh cilantro, shredded cheese, hot sauce

Instructions

  1. Heat the olive oil or butter in a heavy-bottomed skillet over medium heat until shimmering.
  2. Cook the chopped chorizo in the skillet for 5–7 minutes, stirring occasionally until browned and cooked through.
  3. Prepare the eggs by cracking them into a mixing bowl, seasoning with salt and pepper, and whisking until well combined.
  4. Combine the whisked eggs with the chorizo in the skillet, gently stirring for 2–3 minutes until the eggs are cooked to your desired doneness.
  5. Serve the dish with optional toppings on your favorite breakfast plates.

Notes

Make chorizo ahead and store in the fridge for quick breakfasts. You can also use egg whites for a lower-calorie option.
