- 1 cup Chorizo Sausage, chopped
- 4 large Eggs
- Salt, to taste
- Pepper, to taste

Instructions
- Heat the olive oil or butter in a heavy-bottomed skillet over medium heat until shimmering.
- Cook the chopped chorizo in the skillet for 5–7 minutes, stirring occasionally until browned and cooked through.
- Prepare the eggs by cracking them into a mixing bowl, seasoning with salt and pepper, and whisking until well combined.
- Combine the whisked eggs with the chorizo in the skillet, gently stirring for 2–3 minutes until the eggs are cooked to your desired doneness.
- Serve the dish with optional toppings on your favorite breakfast plates.
Notes
Make chorizo ahead and store in the fridge for quick breakfasts. You can also use egg whites for a lower-calorie option.
