- 24 chocolate sandwich cookies, crushed
- 5 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 6 ounces semi-sweet chocolate, melted and slightly cooled
- 2 tablespoons unsweetened cocoa powder
- 1 1/4 cups heavy whipping cream, divided
- 1 cup semi-sweet chocolate chips
- 2 tablespoons chocolate shavings
- 8 small chocolate pieces or squares, for garnish
Instructions
- Prepare the crust. Start by crushing the chocolate sandwich cookies into fine crumbs. Mix them with the melted butter until combined. Press into a 9-inch pie dish and chill for 20 minutes.
- Make the filling. In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, cocoa powder, and chocolate, mixing until creamy and blended.
- Whip the cream. In another bowl, whip 1 cup of cream until soft peaks form. Fold into the chocolate mixture gently.
- Assemble the pie. Spoon the filling into the cooled crust and smooth the top. Refrigerate for at least 4 hours or overnight.
- Prepare the ganache. Heat the remaining cream until warm, then pour over chocolate chips. Stir until smooth.
- Decorate. Pour ganache over the chilled pie and top with whipped cream, chocolate shavings and chocolate pieces.
- Slice and serve chilled for a delightful experience.
