A hearty and comforting dish combining chicken sausages, zucchini, and tomatoes with pasta, perfect for quick weeknight dinners.

- 4 Chicken Sausages
- 2 Zucchini, chopped
- 2 cups Tomatoes, diced
- 8 oz Pasta (spaghetti, penne, or fusilli)
- 2 tbsp Olive Oil
- 3 cloves Garlic, minced
- Salt and Pepper, to taste
- Parmesan Cheese, for serving (optional)
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook the pasta according to the package instructions. When al dente, drain and set aside, saving a cup of pasta water.
- Heat Olive Oil: In a large skillet over medium heat, add a generous drizzle of olive oil and wait for it to shimmer.
- Sauté Garlic: Add minced garlic to the hot pan, stirring until fragrant, about 30 seconds.
- Cook the Sausages: Slice the chicken sausages diagonally and add them to the skillet. Let them brown, about 5-6 minutes.
- Add Zucchini and Tomatoes: Toss in the chopped zucchini and diced tomatoes, seasoning with salt and pepper. Stir well and cook for an additional 5-7 minutes.
- Combine with Pasta: Gently fold the cooked pasta into the skillet, adding reserved pasta water if needed.
- Serve Warm: Plate and top with freshly grated Parmesan cheese if desired.
Notes
Store leftovers in the fridge for 3-4 days or freeze for 3 months. Reheat with a splash of water or broth.
