Description

A hearty and comforting dish combining chicken sausages, zucchini, and tomatoes with pasta, perfect for quick weeknight dinners.


Ingredients

  • 4 Chicken Sausages
  • 2 Zucchini, chopped
  • 2 cups Tomatoes, diced
  • 8 oz Pasta (spaghetti, penne, or fusilli)
  • 2 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Parmesan Cheese, for serving (optional)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to the package instructions. When al dente, drain and set aside, saving a cup of pasta water.
  2. Heat Olive Oil: In a large skillet over medium heat, add a generous drizzle of olive oil and wait for it to shimmer.
  3. Sauté Garlic: Add minced garlic to the hot pan, stirring until fragrant, about 30 seconds.
  4. Cook the Sausages: Slice the chicken sausages diagonally and add them to the skillet. Let them brown, about 5-6 minutes.
  5. Add Zucchini and Tomatoes: Toss in the chopped zucchini and diced tomatoes, seasoning with salt and pepper. Stir well and cook for an additional 5-7 minutes.
  6. Combine with Pasta: Gently fold the cooked pasta into the skillet, adding reserved pasta water if needed.
  7. Serve Warm: Plate and top with freshly grated Parmesan cheese if desired.

Notes

Store leftovers in the fridge for 3-4 days or freeze for 3 months. Reheat with a splash of water or broth.
