Description

A hearty dish featuring tender chicken, fluffy mashed potatoes, corn, and rich gravy, perfect for a comforting meal.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups mashed potatoes (store-bought or homemade)
  • 1 cup corn kernels (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup prepared gravy (chicken or brown)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Mix the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper in a medium bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook undisturbed for about 7-9 minutes until browned and fully cooked.
  3. Warm the gravy in a medium saucepan according to package instructions or your homemade recipe.
  4. Cook frozen corn according to package instructions or heat canned corn in a small saucepan until warm.
  5. Prepare or reheat your mashed potatoes until steaming hot and smooth.
  6. Assemble by adding a scoop of mashed potatoes to each serving bowl, followed by the corn and chicken.
  7. Drizzle warm gravy over the chicken and potatoes.
  8. Sprinkle shredded cheese on top and garnish with parsley before serving immediately.

Notes

Make-ahead tips: Prepare the mashed potatoes and chicken ahead of time and reheat gently before assembling. For a healthier option, consider using an air fryer for the chicken.
