Description

A comforting casserole featuring shredded chicken, fresh cherry tomatoes, and gooey mozzarella, blended with fragrant herbs for a delightful family meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup fresh basil, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch casserole dish with olive oil or nonstick spray.
  2. Combine the shredded chicken, halved cherry tomatoes, minced garlic, dried basil, dried oregano, and olive oil in a large mixing bowl. Season with salt and pepper.
  3. Transfer the mixture to the greased casserole dish, spreading it into an even layer.
  4. Sprinkle the shredded mozzarella evenly over the top, then add Parmesan.
  5. Bake for 25–30 minutes until the cheese is melted and golden. For a crispier top, broil for 1–2 minutes.
  6. Remove from the oven and let rest for 5 minutes. Garnish with chopped fresh basil before serving.

Notes

For a lighter dish, use part-skim mozzarella. Can be made ahead and refrigerated before baking. Perfect for meal prep and easy reheating.
