Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the diced chicken to the pot and cook until golden brown, about 5 to 7 minutes.
- Toss in the onion, garlic, and sliced mushrooms, sauté until softened, about 3 to 5 minutes.
- Stir in the orzo until well coated.
- Pour the chicken broth into the pot and bring to a gentle boil.
- Reduce the heat to a simmer, cover, and let cook for about 15 minutes.
- Season with salt and pepper to taste, and serve warm, garnished with fresh parsley if desired.
