Description

Delightful muffins that blend sweet cherries with a buttery streusel topping, perfect for breakfast or as a snack.


Ingredients

  • 1 1/2 cups all-purpose flour

  • 2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with vibrant cupcake liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until well blended.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until the mixture is smooth and cohesive.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just mixed; avoid overmixing to maintain that tender crumb.
  5. Gently fold in the cherry pie filling, ensuring it’s evenly distributed throughout the batter.
  6. In a small bowl, mix the melted butter, brown sugar, oats, flour, and cinnamon to create a crumbly topping.
  7. Divvy up the muffin batter into the prepared muffin tin, filling each liner about two-thirds full. Sprinkle the crumb topping generously over each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool slightly in the tin.
