Description
A comforting and satisfying Cheesy Potato Egg Scramble, perfect for breakfast or brunch, featuring crispy potatoes, fluffy eggs, and melted cheese.
Ingredients
Scale
- 2 large potatoes, diced
- 4 large eggs
- 1 cup shredded cheese (cheddar or your preference)
- 1 tablespoon butter or oil
- Salt and pepper to taste
- Optional: chopped onions, bell peppers, or herbs
Instructions
- Heat the skillet: Start by heating your skillet over medium heat, adding butter or oil. Allow it to melt and spread evenly across the bottom.
- Cook the potatoes: Add the diced potatoes to the skillet. Cook them for about 10-15 minutes, stirring occasionally, until they are golden brown and crispy on the outside while remaining tender on the inside.
- Whisk the eggs: In a mixing bowl, crack the four eggs and season with salt and pepper. Whisk them until they are frothy and well mixed.
- Scramble the eggs: Push the crispy potatoes to one side of the skillet, creating space for the eggs. Pour the whisked eggs into the other side. Gently scramble them until they reach your preferred level of doneness.
- Add the cheese: Once the eggs are almost done, sprinkle the shredded cheese over the top, allowing it to melt into the creamy eggs and crispy potatoes.
- Mix and serve hot: Gently fold the potatoes, eggs, and melted cheese together. Serve immediately, piping hot for a hearty breakfast!
Notes
Make-ahead tips: Diced potatoes can be stored in cold water overnight. This dish can also be prepared in an air fryer or oven.
