- 1 lb ground beef (80/20 recommended)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 14 oz sturdy tortilla chips
- 1 cup canned black beans, drained and rinsed (or pinto beans)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup pickled jalapeño slices (optional)
- 1/2 cup sour cream (for topping)
- 1/2 cup salsa or pico de gallo (for topping)
- 1/4 cup chopped fresh cilantro (for topping)
- 1 medium avocado, diced or sliced (for topping)
- 2 green onions, thinly sliced (for topping)
- Lime wedges (for serving)
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
- Heat a large skillet over medium-high heat. Add the ground beef, breaking it up as you cook. After 3-4 minutes, let it brown thoroughly.
- Stir in the finely diced onion and cook for another 2 minutes, allowing it to soften.
- Add the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for another 2 minutes.
- Spread the tortilla chips evenly across the prepared baking sheet.
- Spoon the beef mixture evenly over the chips, followed by scattering the black beans.
- Sprinkle the shredded cheddar and Monterey Jack cheeses over the top. Finish with pickled jalapeños, if using.
- Place the baking sheet in the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and allow to cool for 2-3 minutes. Top with sour cream, salsa, avocado, cilantro, and green onions. Squeeze lime juice over everything.
- Serve warm and enjoy!
