Description

  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 14 oz sturdy tortilla chips
  • 1 cup canned black beans, drained and rinsed (or pinto beans)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pickled jalapeño slices (optional)
  • 1/2 cup sour cream (for topping)
  • 1/2 cup salsa or pico de gallo (for topping)
  • 1/4 cup chopped fresh cilantro (for topping)
  • 1 medium avocado, diced or sliced (for topping)
  • 2 green onions, thinly sliced (for topping)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. Heat a large skillet over medium-high heat. Add the ground beef, breaking it up as you cook. After 3-4 minutes, let it brown thoroughly.
  3. Stir in the finely diced onion and cook for another 2 minutes, allowing it to soften.
  4. Add the minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for another 2 minutes.
  5. Spread the tortilla chips evenly across the prepared baking sheet.
  6. Spoon the beef mixture evenly over the chips, followed by scattering the black beans.
  7. Sprinkle the shredded cheddar and Monterey Jack cheeses over the top. Finish with pickled jalapeños, if using.
  8. Place the baking sheet in the oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and allow to cool for 2-3 minutes. Top with sour cream, salsa, avocado, cilantro, and green onions. Squeeze lime juice over everything.
  10. Serve warm and enjoy!
